Taking over a well-known Canberra business comes with a different kind of pressure. For Mohammed Elmir, stepping into The Flute Bakery wasn’t just about running a café — it was about continuing something the local community already trusted.

With over two decades of history behind it, The Flute Bakery holds a strong place in Canberra’s café scene. Mohammed’s role has been to honour that reputation while quietly strengthening what sits behind it — from team culture to customer experience.

About The Business

The Flute Bakery is a long-standing Canberra café known for its quality baked goods and loyal customer base. With more than 20 years of history, it has become a familiar place for locals — particularly those who value consistency, quality, and a relaxed café environment.

Mohammed Elmir didn’t build the business from scratch. Instead, he stepped into an established operation, bringing with him experience from running another family business and a strong connection to Canberra’s food and hospitality community.

"It’s about keeping what people already love, while making sure every customer walks in and feels welcome.”

Rather than changing everything, his approach has been measured. He retained the existing bakers and pastry chefs, preserving the product quality customers already trusted. At the same time, he introduced a different energy into the business — one centred around customer service, team culture, and creating a more welcoming experience in-store.

This balance between maintaining legacy and introducing change is shaping how the business continues to evolve.

Q&A with Mohammed

Tell us about The Flute Bakery.
It’s a bakery and café that’s been around for over 20 years. We serve baked goods, coffee, and café food. It’s well known, especially with older customers who come in regularly.

What are you most proud of since taking over?
Keeping the standard of the business. A lot of people thought it might go downhill when it sold, but we’ve kept the team and maintained the quality.

What decision made the biggest difference?
Focusing on customer service. Making sure customers feel welcomed, that staff are engaging and positive — that’s made a big difference.

What are you working on improving right now?
Bringing in new products and looking at reopening wholesale, but doing it slowly so we don’t affect consistency.

Why did you take on this business?
I originally had another bakery planned for wholesale, but when this came up for sale, it made more sense to take on something already running.

What was the hardest part early on?
Learning everything — the products, the ingredients, the systems, and making sure the quality stays consistent.

What’s become more challenging as the business has grown?
Consistency. As you get busier, it’s harder to keep everything exactly the same every time.

One thing that stood out

One thing that stood out here was the deliberate pace of change. In Canberra, particularly with long-standing businesses, growth isn’t always about moving faster — it’s about protecting what already works while introducing improvements in a way the business can absorb. This is a pattern that often shows up in established Canberra businesses where reputation has been built over decades.

If you’re after a Canberra café with a strong local following, The Flute Bakery is a place many already know well.
